These past few months I have had a very special Colombian dish in my mind which I wanted to grab and turn around into Vegan: Tortas de Espinaca. These savory cakes are a typical dish from Colombia, but I must confess what always intimidated me was that eggs are the primary ingredient in the traditional recipe.
On Wednesday though, while I was passing by a huge
bunch of spinach in the Local Market, I thought to myself: “I ‘m doing this! I
am finding a tasty way to make Tortas de Espinaca VEGAN!”
Looking up a couple of recipes online and adding up
some personal spice and preference, I came up with this easy recipe!
An excellent entrée to impress your friends, or a
